One of the most critical steps in normal coffee and Toddy-Civet Cat coffee production is the roasting process.
The civet selects the ripest berries of the coffee plants from the Old Robusta Coffee plants and eats the whole fruit. As the civet cannot digest the seed of the fruit (actually, it is the coffee bean), it expels them among its feces.

Coffee seeds make their way (in whole) through the digestive path of this civet, then it is collected, and this is no ordinary coffee. This coffee is in high-demand for its unique flavor and is very expensive.
